Green Goddess Wedge Salad

Poor scorned iceberg lettuce. It had its time in the limelight … but that was long ago. Well! I propose we bring it back! At least, in wedge form – because there is nothing like a crispy, crunchy, ice-cold wedge salad.

A classic wedge is sprinkled liberally with bacon, but we don’t do that here, because we’re taking this wedge to Vegantown. So instead, we smoky-up some chickpeas and add those to the mix. So good.

I thought I’d double up on the retro by smothering this wedge in a green goddess style dressing, flavored liberally with fresh herbs and made creamy with avocado and tahini.
