This time of year is such a conundrum. I’m over the sugary sweets of the holidays, but it’s also a bit of a last hurrah before the fresh start of the New Year. I’d like to think this recipe sort of hits a happy medium. It’s comfort food for sure, but it’s also super, duper healthy. It kind of makes me feel like I’m sneaking in one more heavy meal in before I change my ways forever, but really, it’s a nice healthy jump start on my resolutions.
I tried a couple different ingredient combinations before settling on this one. The quinoa ended up sealing the deal – texture-wise, it makes this white chili oh-so thick and hearty. The roasted poblanos add incredible flavor and just the right touch of heat. It takes a few extra minutes to roast them up yourself, but it’s so, so worth it.
