GRATED ONION. I’m having a “duh” moment. I made some similar fritters a couple weeks ago – I had some fresh broccoli so I made Smitten Kitchen’s broccoli fritters, but also added a whole grated summer squash and a little leftover kale. They were good, but I think the onion would definitely help boost the flavor. And I like homemade ranch on mine. 🙂
I actually super love yellow squash…zucchini has a “green” taste to me that’s just not my favorite. These fritters look delicious…I’ll have to make them next time I’m in the mood to put in some effort for breakfast!
I love fritters! Perfect veggie/omnivore dinner solution. Add egg for me, add bacon for him 🙂
Also, everything is better with squash and creamy zingy sauce 🙂 Thanks for the inspiration.
I made these for dinner tonight and the boys ate them right up, said they taste just like summer! The sour cream with lemon was a nice compliment. Thank you !
Summer squash is great sauteed with onions, especially as an addition to scrambled eggs! I make it for breakfast many summer mornings. Its unbelievable how well they go together!
I haven’t, but I’m sure a one-for-one swap would work great. Love subbing Greek yogurt for sour cream.
