Peanut Butter Protein Power Smoothie

Peanut Butter Protein Power Smoothie

Posted on Monday, April 7, 2014 in Beverages

Yep, more protein! In last Wednesday’s post, I talked about my recent decision to start including extra protein wherever I can think to add it. So, naturally, more of the recipes I share here are going to have more protein in them while I see how this new dietary tweak goes. I hope that’s cool with you!

When I decided to start packing more protein into my recipes, naturally, smoothies were one of the first things to come to mind. I mean, I’m already on a smoothie kick. So: smoothie kick, meet protein kick. And then hello, Peanut Butter Protein Power Smoothie.

I’m proud of myself. In 2014, I’ve really cut down on my Starbucks habit. I drop by maybe once per week, which is a huge improvement over my previously daily habit. Okay, maybe twice per week. Okay, okay – occasionally three times.

But still! I’m doing better.

Toasted Coconut Coffee Smoothie

Toasted Coconut Coffee Smoothie

I’ve got a definite thing for smoothies lately, and a definite definite thing for coconut smoothies. I mean, coconut is good in just about anything, but when I add it to a smoothie in any form – milk, water, flakes, toasted flakes – I feel like I’m drinking a milkshake.

A smoothie that’s pretty healthy overall, but still feels indulgent? Win. And I’ve got a definite definite DEFINITE thing for this Toasted Coconut Coffee Smoothie.

Iiiiiit’s time! Valentine’s Day is just around the corner. Bring on the pink, the hearts, the red velvet, the mushy-mush. Gushing proclamations of love and stubborn anti-V.D. sentiments are sure to abound in equal measure.

We’re still dealing with a seriously picky-eating toddler over here. I joke that bacon is one of her food groups; except that’s not really a joke – it’s kind of the truth. And if she had her way, chocolate would be another food group. At least our kid has something in common with her vegetarian chocoholic mama.

Whole Wheat Vanilla Yogurt Pancakes

Whole Wheat Vanilla Yogurt Pancakes

Our picky toddler is back to loving pancakes (and, more accurately, the maple syrup that goes along with them) – and so I am back to making them. Far be it from me to stick with basic pancakes – not that there’s not plenty to love about those. I just like to fiddle.

And so fiddling brings us to today’s recipe, Whole Wheat Vanilla Yogurt Pancakes. Let me first say: I LOVE THESE VANILLA PANCAKES! I know that’s not terribly profound or descriptive, but darn it, I do.

I am a walking cliche. It’s a brand new year, I have vowed to eat healthier, cleaner, less overall, and just plain better this year. I’ve re-joined a gym, I’m ready to start up Couch to 5K (ahem, again), and, boy. Am I ever on a serious smoothie kick.

After enjoying smoothies that are every color of the rainbow (and loving every second of it), I think this pure white Toasted Coconut Smoothie is oh-so refreshing. Both in the looks department and in the taste department. Is there a taste department? If there was, I’d totally go there. Except then I might have a problem with my 2014 resolutions.

Lately, I’ve been getting into vegan baking. I have to admit, until recently, I associated words like “dry,” “tough,” and “cardboard” with vegan baked goods. But as it turns out, leaving out eggs, milk, and butter really doesn’t have to render a recipe tasteless. Vegan baking can result in a marvelous outcome – and you don’t even need crazy, exotic ingredients to make it happen.

The holidays are upon us, and dang, did Christmas come fast this year, or what?! I thought I had it together, but today, I’m a little stressed. I don’t know about you, but I feel like I need an extra boost (or two, or three) to get me through my endless to-do list.

Oh, and hey! A Power Berry Smoothie (or two, or three) should fit the bill just fine.

For us, breakfast strata is an absolute must on Christmas morning. I grew up with it, and the holiday just wouldn’t feel complete without it.

Plus, when you make it the night before, the only work you have to do in the morning is pull the breakfast strata out of the fridge, uncover it, and stick it in the oven. Less time in the kitchen, more time playing with the toys Santa brought you. If you’ve been good, that is.

How’s it going with your gift-buying this year? Aside from the play kitchen Santa is attempting to make for our little one (think old free entertainment center plus Pinterest-fueled aspirations), I’ve had my gift-buying wrapped up for weeks now.

I don’t really feel like I have it together, though. I mean, for one, there are still a gazillion things to do. Christmas came fast this year. And all that punctual Christmas gift buying really means is that I end up buying more stuff.
