Toasted Coconut Coffee Smoothie

Toasted Coconut Coffee Smoothie

I’ve got a definite thing for smoothies lately, and a definite definite thing for coconut smoothies. I mean, coconut is good in just about anything, but when I add it to a smoothie in any form – milk, water, flakes, toasted flakes – I feel like I’m drinking a milkshake.

A smoothie that’s pretty healthy overall, but still feels indulgent? Win. And I’ve got a definite definite DEFINITE thing for this Toasted Coconut Coffee Smoothie.

I am a walking cliche. It’s a brand new year, I have vowed to eat healthier, cleaner, less overall, and just plain better this year. I’ve re-joined a gym, I’m ready to start up Couch to 5K (ahem, again), and, boy. Am I ever on a serious smoothie kick.

After enjoying smoothies that are every color of the rainbow (and loving every second of it), I think this pure white Toasted Coconut Smoothie is oh-so refreshing. Both in the looks department and in the taste department. Is there a taste department? If there was, I’d totally go there. Except then I might have a problem with my 2014 resolutions.

Today, I have no story. The kid and the dog are playing on the floor, sort of throwing the tennis ball back and forth. It’s cute. My guy and I have just started house shopping and my brain is reeling a bit from our first excursion out looking yesterday evening. We’ve started packing up this house and it’s already mayhem. And then the daycare I had just started taking my little one to a couple of mornings per week – the daycare that took me months to find, that took me even longer to wrap my brain around, the daycare that my little one was loving, the daycare that allowed me to have a few blessed uninterrupted hours to work on Kitchen Treaty – just fell through.

And so I’m processing. Lots of processing. No story, but there is a smoothie.

We’re into our hearty breakfasts around here. What’s the saying? Eat breakfast like a king, lunch like a queen, and dinner like a pauper? We do pretty well on the first two, though generally we eat dinner like kings again. I guess we like our crowns.

Breakfast, though, that’s a biggie. Especially now that the little one is in the mix – just from pure instinct, breakfast is her largest meal of the day.

I don’t know what’s up with me and carrot cake lately, but I want to make carrot cake everything. Pancakes, waffles, cookies, oatmeal. It’s almost pumpkin-level, and for that, I apologize to my dear significant other, who still can’t fathom the idea of pumpkin in anything after my pumpkin-everything frenzy last fall.

So, I realize I’m several years late to the party here, but I’ve finally discovered yoga.

It’s, like, a trip to the spa for a massage. Except you do it yourself, it’s cheaper, and you feel even better afterwards. I’m taking very beginner level classes – no impossible pose attempts in front of depressing mirrors and no hot-yoga blackout episodes, not that I’d know anything about either of those things – and I’m practically giddy over how much I’m enjoying it. “Grace” and “flexible” are about the last two words one would ever use to describe me, but if I keep this up, maybe I’ll get a little closer. So far, it certainly makes me feel great.

Sometimes a vacation is really, really in order. Like a wonderful trip to Hawaii, for instance {pause for day-dreamy sigh}.

Unfortunately, the times when a vacation is very very much needed often coincide directly with the times in which it’s utterly impossible. This, I think, would be one of those times. So I’ll close my eyes and dream of swaying palm trees, sunlight on my face and sugar-sand beaches.

It’s snowing! And snowing, and snowing, and snowing …

Here in the Pacific Northwest, three back-to-back snowy weather systems have made their way through the area, making everything pretty and pristine and quiet and white.
