Baileys & Coffee Blondies

Our 2-year-old has a new habit lately, and I worry it’s something she learned directly from her parents.

“Daisy! No eat the house!”

“Daisy! No hit the CARS!”

Chocolate Oatmeal Cream Pies with Vanilla Bean Buttercream

Yeah, so I had to pack up these chocolate oatmeal cream pies and get them out of the house almost the instant they were put together.

Don’t misunderstand – I taste-tested them. Thoroughly. I mean, it’s my job, right?! My kid and my guy tested them repeatedly as well. And then, later, my guy’s coworkers. They were a hit. Especially with me. Which is why they needed to be out of my clutches as soon as humanly possible.

This is what making cookies with my almost-two-year-old daughter looks like these days:

I scoop the flour and hand it to her. She very carefully, and surprisingly accurately, tips it into the bowl and lifts up, dispensing the contents like a pro. A teaspoon of baking soda … tip and pour. A mix with the whisk, and then the salt and the cocoa powder. Precise. Impressive.

Pumpkin, pumpkin, pumpkin! Can you ever get tired of pumpkin?! That’s rhetorical question. At least, coming from me it is. But if you asked my guy, he’d have a decidedly quick actual answer. I think he continues to remain sick of pumpkin thanks to last year’s Pumpkinpalooza.

Note to the couple who bought our house and the swarm of people in and out a few weeks ago in relation to that: Those cookies sitting on the kitchen counter? The ones with the suspicious green flecks baked into them? Those cookies were not funny cookies! That was just zucchini. Really!

I’m not going to say “you’ll never know it’s there!” because clearly, if you look at the cookie, well, you’ll see it’s there. If you eat it in the dark or blindfolded, though, it’s true. You might not know it’s there.

My veggie-averse (sigh) toddler doesn’t know it’s there. Or she doesn’t care. She loves, loves, loves these cookies.

I love having a food blog. I’ve always adored experimenting with recipes, writing is in my blood, and I’ve been huge into photography since the beginning of time (though for me, food photography is much more of a challenge than landscapes, pets, or portraits). Oh, and I love creating spaces on the web – I’ve been drawn to the internet since its inception, shaping my career first around web design, then development, then focusing more on writing professionally for corporate websites, and then finally, this blog – such a perfect intersection of so much of what I love.

Let me just disclaim right off the bat that I really hate these photos. But I love the cookies – or, I should say, loved the cookies. They’re long gone, and only these crappy photos remain. And is “disclaim” even a word? Never mind that. Cookies.

Yesterday was the perfect day.

I got out of the house early and took my little one to a “Baby and Me” story time session at the local library. At three months, she’s too young to get too much out of it, but when she looked around in awe, smile plastered on her face, I knew I’d made the right choice.

Raisins are one of those super-divisive foods that can bring out the passionate opinions in even the most placid of folks. See also: olives, cilantro, avocados, mushrooms.

I actually like all of these foods. Especially raisins. Those silly raisin-haters don’t know what they’re missing. A bowl of oatmeal is incomplete without ‘em, for instance.  Okay, I’ll admit I don’t really like them (or much of anything) in my carrot cake, but I find plenty more places for them than not. And Raisinets – chocolate-covered raisins? Yes, please. I would like to find them just about anywhere.

Like in these cookies, for instance.

Top o’ the morning to ya! Welcome to a big, huge day in my blogosphere. See, not only am I sharing this insanely delicious cookie in honor of Saint Patty’s Day, but I’m also launching a new blog! It’s called Kitchen Treaty, and it’s been in the works for awhile. It’s a food blog dedicated to showing that vegetarians and meat-eaters can live together, and I’ll be sharing loads of recipes that I’ve developed over the years. Some of them start out as one dish and end up as two – one for the vegetarians, one for the carnivores – and some of them are vegetarian recipes that are so delicious the carnies in your life won’t even notice the lack of meat. Plus a few extra thrown in here and there. I’ll still be posting here, but I do so hope you’ll come on over and check Kitchen Treaty out, too.

And now! About these cookies.

We’re a sleepy household these days. With an almost-four-week-old in the house, the longest we get to sleep is in three-and-a-half-hour stretches. (Well, last week I thought my baby slept for five and a half hours, until my guy reminded me that I actually did get up during that time. I didn’t believe him until I checked my iPhone app that I use to track feedings … sure enough, a 3 a.m. feeding that I didn’t remember, until about 15 minutes later when it finally came back to me. Scary.)

It’s snowing! And snowing, and snowing, and snowing …

Here in the Pacific Northwest, three back-to-back snowy weather systems have made their way through the area, making everything pretty and pristine and quiet and white.
