Toasted Coconut Coffee Smoothie

Toasted Coconut Coffee Smoothie

Posted on Thursday, February 6, 2014 in Beverages

I’ve got a definite thing for smoothies lately, and a definite definite thing for coconut smoothies. I mean, coconut is good in just about anything, but when I add it to a smoothie in any form – milk, water, flakes, toasted flakes – I feel like I’m drinking a milkshake.

A smoothie that’s pretty healthy overall, but still feels indulgent? Win. And I’ve got a definite definite DEFINITE thing for this Toasted Coconut Coffee Smoothie.

I am a walking cliche. It’s a brand new year, I have vowed to eat healthier, cleaner, less overall, and just plain better this year. I’ve re-joined a gym, I’m ready to start up Couch to 5K (ahem, again), and, boy. Am I ever on a serious smoothie kick.

After enjoying smoothies that are every color of the rainbow (and loving every second of it), I think this pure white Toasted Coconut Smoothie is oh-so refreshing. Both in the looks department and in the taste department. Is there a taste department? If there was, I’d totally go there. Except then I might have a problem with my 2014 resolutions.

Slow Cooker Quinoa White Chili with Roasted Poblanos

Slow Cooker Quinoa White Chili with Roasted Poblanos

This time of year is such a conundrum. I’m over the sugary sweets of the holidays, but it’s also a bit of a last hurrah before the fresh start of the New Year. I’d like to think this recipe sort of hits a happy medium. It’s comfort food for sure, but it’s also super, duper healthy. It kind of makes me feel like I’m sneaking in one more heavy meal in before I change my ways forever, but really, it’s a nice healthy jump start on my resolutions.

The holidays are upon us, and dang, did Christmas come fast this year, or what?! I thought I had it together, but today, I’m a little stressed. I don’t know about you, but I feel like I need an extra boost (or two, or three) to get me through my endless to-do list.

Oh, and hey! A Power Berry Smoothie (or two, or three) should fit the bill just fine.

Sometimes I’m not really sure if I should share something with y’all. Especially when, say, it takes so few ingredients and so little time that it’s hardly even really a recipe. Or it’s so straightforward that it took me pretty much zero imagination to come up with it. Or it’s something I didn’t even come up with myself. Or all three. I mean, everyone has had homemade fries baked in the oven, right?

I had so much fun making these muffins with my little girl. I’ve held her on my hip as she “helped” me awkwardly sift and stir, but this time, and for the first time, I was able to sit her on the kitchen counter like a big girl. As I kept a hand on her at pretty much all times, she measured, spooned, poured, and mixed. “Eggs!” “Na-nilla!” “Flow-ah!” she exclaimed as we pulled ingredients out and mixed them in to make the perfect muffins. And, of course, we also made a perfect mess.

Skinny Vanilla Bean Cheesecake Popsicles

Skinny Vanilla Bean Cheesecake Popsicles

Welcome to my very first “skinny” recipe! I’ll be honest – I’m not sure I love the use of “skinny” in recipe titles, and I’ve been hesitant to jump on that particular bandwagon. But sometimes you’ve just gotta go with the most descriptive word, and so “skinny” it is.

These vanilla cheesecake pops are the best of both worlds – they taste so rich and utterly sinful, but they’re only 128 calories each. Seriously – 128 calories!

Creamy Greek Salad Sandwich Wraps with Optional Chicken (+ a Food Writing Workshop!)

There are some definite cliches when it comes to writing for food blogs, and after attending a food writing workshop with the inspiring Kathleen Flinn earlier this month, I’m more aware of them – and the fact that I have used every one ad nauseam – than ever before.

I mean, I really, really want to talk about the weather right now. (The calendar says summer’s all but here, but it’s freezing out there and now I’ve got a miserable cold – what?!) And I’m pretty much obsessed with farmer’s markets, but if I ever find myself writing that I picked up some delicious-looking peaches at one and then decided to make a tart with them, I’ll now know I’ve officially jumped the blog shark (um, again).

Rosemary & Sea Salt Roasted Chickpeas (Garbanzo Beans)

Rosemary & Sea Salt Roasted Chickpeas (Garbanzo Beans)

For better or worse, one single word describes a really good snack to me: “addictive.” Lay’s nailed it with their “betcha can’t eat just one” motto … when you find you can’t stop, you know you’ve got something salty, crunchy, and usually sinful. Usually.

That’s why I love roasted chickpeas. Salty and crunchy – yes. Addictive – yes, yes, yes. Sinful? Nope! These things are healthy, and that’s why they’re a favorite snack in our house.
