Last Friday marked the first CSA pick-up of the season – and, well actually, our first CSA pick-up ever. We’ve had boxes of produce delivered to our door in the past, but this is the first true CSA (community-supported agriculture) share we’ve purchased.

This salad became a fast favorite when I dug into the first batch a couple of years ago, and it remains a fave – especially this time of year when tomatoes are in season, sweet onions are plentiful, and the garden overflows with basil and mint.

Protein-rich chickpeas (also known as garbanzo beans) and hearty orzo pasta provide the basis for this delicious meal-in-a-bowl. Sprinkle in fresh halved cherry tomatoes, sweet onion, chopped mint and basil, then dress with a lemon vinaigrette and you’ve got a simple – and simply winning – salad.

I never was a fan of beets. Scratch that … I hated them. Actually, loathed. Tasted like dirt, I always said.

But then I discovered roasted beets. Something about roasting them does away with that dirt taste. Instead it brings out that sweet, slightly mineral, and altogether unique flavor that all you beet lovers out there were talking about. I get it now … well, a little. I don’t think I’m going to jump right into borscht or boiled beets quite yet, but who knows. Maybe roasted beets are a gateway.

Meanwhile, this salad. Oh my. This salad. Well first, of course, it’s gorgeous. You’ve got those deep, dark, ruby roasted beets soaked in honey-dijon oregano vinaigrette, scattered over a medley of crisp spring greens. Top that with a coin of creamy, tangy goat cheese, sprinkle with icy red onions, and suddenly you’ve achieved salad nirvana.

This amazing salad combines sweet strawberries with salty feta along with the zip of red onions and the nice crunch of toasted almonds. The vinaigrette makes it, though. The honey and balsamic vinegar set off the flavors of the salad just so. The optional balsamic-and-fresh-basil marinated and grilled chicken is tender, moist, and full of flavors that complement the dish perfectly – and it’ll make the carnivores in your life happy.
