Yeah, so I had to pack up these chocolate oatmeal cream pies and get them out of the house almost the instant they were put together.
Don’t misunderstand – I taste-tested them. Thoroughly. I mean, it’s my job, right?! My kid and my guy tested them repeatedly as well. And then, later, my guy’s coworkers. They were a hit. Especially with me. Which is why they needed to be out of my clutches as soon as humanly possible.
Welcome to my very first “skinny” recipe! I’ll be honest – I’m not sure I love the use of “skinny” in recipe titles, and I’ve been hesitant to jump on that particular bandwagon. But sometimes you’ve just gotta go with the most descriptive word, and so “skinny” it is.
These vanilla cheesecake pops are the best of both worlds – they taste so rich and utterly sinful, but they’re only 128 calories each. Seriously – 128 calories!

Except please don’t. Because I don’t ever want to stop drinking iced coffee, and especially this vanilla iced coffee.
How did I live life before iced coffee? Granted, with a young toddler in my life, I sleep less than ever these days (yeah, I totally know that’s the 500th time I’ve mentioned it), so maybe that’s why I can’t imagine a life (and especially a morning) without a frosty glass of the stuff clutched between my desperate hands.
Who knows, though. Maybe the sleep deprivation thing is an excuse. I mean, either way, I just plain love the stuff.
Yesterday was the perfect day.
I got out of the house early and took my little one to a “Baby and Me” story time session at the local library. At three months, she’s too young to get too much out of it, but when she looked around in awe, smile plastered on her face, I knew I’d made the right choice.
