Say what? It’s Pancake Day?! That screeching sound you hear would be the brakes I just put on my grilled pizza post, the one I told you yesterday that I was going to share today. I’ll save that one for tomorrow. Today, I must observe Pancake Day. Tomorrow will be about the pizza.
I hope that’s okay. Pancakes are always okay though, right?!
So, pumpkin. I’ve been a little obsessed with it lately. I mean, it’s my job: I’m a nesting new mom, I’m thoroughly in love with fall, I’m a food blogger, I like to eat. And Nutella too, for that matter. Good gracious, how is it that something can taste that good? Dangerously delicious stuff, that Nutella.
So I thought I’d take a couple of my obsessions and combine them into something that is also pretty much perpetually an obsession: smoothies. Delighted to meet you, Pumpkin Nutella Smoothie.
So, zucchini fries. Not a new concept in the blogosphere and beyond, but something that flew under my radar until only recently. When I caught a glimpse of these crispy goodies during one of my many massive pinning sessions (ahem, can you say “Pinterest addiction”?), I knew they had to be mine.
Zucchini. Cut into fry shapes. Breaded in spicy Panko bread crumbs. Baked until crispy. Dipped in a cool, lemony, dill-infused Greek yogurt dip.
When life gives you lemons … and poppyseeds … and greek yogurt … make these muffins.
Not that life is really likely to give you any of those – unless the grocery store is “life” and opening up your wallet is “giving.” Nonetheless, make these muffins.
It took me awhile to succumb, but I finally have. I have tried – and, as it turns out, love – green smoothies.
