This Week’s Bits & Bites

Happy Mother’s Day! It’s 6:35 a.m. and we’ve been up for nearly two hours. Our daughter woke up early because she was “SO EXCITED for Mother’s Day!” Guess she missed the memo about sleeping in and breakfast in bed.

Still, she picked out an excellent bird bath for my garden, and she was just so excited to present it to me. I admit, my first choice in bird baths probably wouldn’t have involved a portly frog. But you know, it’s perfect – exactly what I would expect from my kiddo and special because of that.

So what’s been up with us? Well, we’re just busy over here soaking in the last couple of weeks of preschool and trying to enjoy the semi-sunny days while they’re here. Last week we visited a local garden (photographed above) and my daughter loved it (I geek out at gardens so that’s a win win for me). More garden visits in our future!

Blog-wise and school-wise? I admit I haven’t done much on either front these past couple of weeks. Life and all. Much of our spare time has been spent planning our kitchen and yard renovations and working on a playhouse that we are repurposing from a one of those big backyard play structures.

One of the landscape designers who visited us last week mentioned a canvas teepee playhouse some friends had erected and we had a forehead bop moment. Well that would have been easier.

Anyway, here are a few of the marvelous things I’ve been, well, marveling at these past several days! That cake, man. Love.

This Potato & Broccoli Curry from Simply Recipes uses ground almonds for creaminess. Must try.

This seriously epic Chocolate Layered Zebra Mousse Cake from Half Baked Harvest. Yes yes.

Vegan Dark Chocolate Cashew Cream Scones from The Full Helping – I honestly hadn’t thought of using cashew cream in baked goods. So brilliant. Must try.

This seriously makes my mouth water: Chargrilled Spring Vegetable Platter with Coarse Sea Salt from With Salt and Pepper. Gorgeous.

Salted Chocolate Chip Tahini Cookies from David Lebovitz. Tahini makes everything better.

Coconut Chocolate Mousse-Filled Strawberries from How Sweet It Is. How cute are these? And dairy-free!

What do you think about cloud eggs? My take: pretty, but too much dang work!

These Vegan Cinnamon Rolls from Oh She Glows look incredible.

That’s it from me! Happy Mother’s Day to all you wonderful moms out there. I hope you are showered with appreciation and adoration today – you deserve it!
