This Week’s Bits & Bites

We got back from our last camping trip of the summer a few days ago, and it’s good to be settled back in, sleeping in real beds and showering in non-scary showers and not reeking of campfires from head to toe. Don’t get me wrong – I love camping – but I’m good for this year. 🙂

We still have our one big summer vacation ahead. Once we’re back, it’ll be full-on back-to-school mode. School in our area doesn’t start until after Labor Day, but it’s already on my mind. Though I am fighting it – I don’t want it to be on my mind. I want to be fully immersed in summer. But sometimes I just can’t help it. I guess it goes back to my pre-teen years when that big thick August issue of Seventeen would arrive and I would immediately spend all of my spare hours poring over it, dreaming of my back-to-school wardrobe.

The 80s man. Those were the days.

We’re in the middle of a heatwave here in the Pacific Northwest – and by heatwave, I mean temps in the upper 80s/lower 90s. Which makes it for sure, without a doubt, 100% feel like summer. We’ve got the pool in the yard, the sprinklers out, the blob our kid is obsessed with, and the super soakers at the ready at all time. Why I bought us each a super soaker I have no idea, but our kid thinks they’re the best thing ever. Personally, I can’t help but scream every single time I’m pelted with a well-delivered stream of ice cold water, which is happening on the regular these last few days. So sorry neighbors.

Oh, and because back to school is (against my will) on my mind, I’ve been thinking about school lunches. We made these Pizza Lollipops from Weelicious a few days ago and they were a hit! One more lunchtime possibility to add to the list – with a selective eater on our hands, we need all the options we can get.

Less kid-friendly are these Frozen Margarita Ice Pops from Gimme Some Oven. My guy and I need these.

Also on my radar lately:

Balsamic Roasted Veggies & White Bean Pasta from Skinnytaste. Perfect light summer dinner!

Golden Beet Hummus from 101 Cookbooks – and this All the Tomatoes Pasta Salad too. Yum and yum.

Chilaquiles Verdes from Cookie + Kate. Love chilaquiles and never thought to give them the verde treatment. Can’t wait to try.

Light Pina Coladas from Wholefully. Frozen cocktails have never sounded better.

White Bean Caprese Salad from Vegetarian Ventures. So pretty!

That’s it from me for now. Have fun summering it up out there! ‘Til next time.
