I was going to share something entirely different here today, but when I sauntered into the grocery store and a big, gorgeous box of fresh, local strawberries stared me in the face, well, things changed. I may or may not have picked up the box; pirouetted once or twice right there in the produce section, box held high; hummed happily as I checked out; and whistled a happy tune while assembling this special little Strawberry Apricot Sunrise Smoothie.

But then the whistling stopped, because I was busy downing the sucker.

Oh, and at the store, there were apricots, too. Plump, big, perfectly ripe, blushing. SUMMER PRODUCE IS OFFICIALLY HERE! And I, for one, could not be more ecstatic. Caps lock says it’s true.

So here we have an ultra simple smoothie that showcases fresh, local summer fruit in all its glorious glory. I added a frozen banana for creaminess and a little almond milk to thin it out a bit (but feel free to add your milk of choice). Then we’ve got a little sweetener, if you like, to help out the apricot (mine was just a touch tart).

And then I layer it to make it all pretty like a sunrise. Because why not?!

Strawberry Apricot Sunrise Smoothie

This simple, scrumptious layered smoothie highlights summer produce at the peak of perfection. If you have a high-powered blender, you can leave the apricot skin on; it should puree right along with everything else.

Ingredients

  • 1 medium ripe apricot (sliced in half and pit removed)
  • 1 frozen banana (halved)
  • 1/3 cup unsweetened almond milk (or milk of choice)
  • 2 teaspoons honey or agave syrup (plus more to taste (if desired))
  • 1 cup fresh strawberries (rinsed and hulled)

Instructions

  • Add the apricot, 1/2 of the frozen banana, and almond milk to the pitcher of a blender. Puree until smooth. Taste and if you feel like it needs to be a little sweeter, add add honey or agave syrup to taste. Puree again. Pour 2/3 of the mixture into a large glass. Add strawberries and the other 1/2 banana to the remaining mixture and puree until smooth. Slowly pour the strawberry smoothie directly into the center of the apricot portion that's in the glass. The apricot should move up the sides of the glass and then a strawberry layer should form on the top. Add a straw and serve.
