Vegetable Lasagna Soup
It’s Monday! The start of a new week, and possibly the restart of eating healthy. Which can only mean one thing: Lasagna!
Wait. Something’s not computing, right? Okay, so this isn’t a heavy, oozy-cheesy lasagna. Instead, it’s lasagna in soup form!
This irresistible soup is loaded up with lots of veggies (mushrooms, spinach, and more), some white beans for protein, and all the flavors of classic lasagna – including, yeah, a big dollop of cheesy goodness. Even with the cheese, Vegetable Lasagna Soup is a great lightened up lasagna option whether you’ve been doing a little lightening up yourself or not.
Because I’ve been avoiding dairy, I also tried this topped with a sea-salt-sprinkled avocado half instead of the cheese. Really, really good, actually! Another option if you would like to make this one vegan: Cashew Ricotta Cheese. I haven’t tried it yet, but it’s on my list.
