Ingredients
2cupscooked farrofrom 3/4 cup dry farro
1/4cupextra virgin olive oil
1tablespoonwhite balsamic vinegar
1/4cupdiced shallotfrom 1/2 medium shallot
1/2teaspoonkosher salt+ more to taste
1/8teaspoonfreshly ground black pepper+ more to taste
2cupshalved cherry tomatoes12 ounces
8ouncesbocconcini or ciliegine mozzarella ballsdrained; can sub fresh mozzarella into bite-size pieces
1/4cuppacked fresh basil leavescut into thin strips
Instructions
Prep the farro according to package instructions. Drain any remaining liquid and spread the farro on a large baking sheet to cool. Once the farro is at room temp, you can proceed.
In a large bowl, whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Add cooked farro, cherry tomatoes, mozzarella, and basil. Toss well to combine.
Taste and add more salt and pepper if desired. Serve or refrigerate in an airtight container for up to 3 days before serving.
