315-ounce canspinto beansdrained and rinsed [about 4 cups cooked beans]
1tablespoonolive oil
1medium yellow oniondiced
1medium clove garlicminced [about 1 teaspoon]
1tablespoonminced fresh gingerabout half of a thumb-sized piece
1tablespooncurry powder
1/8teaspooncrushed red pepper flakesmore or less to taste
1/2teaspooncumin
1/2teaspoonkosher saltplus more to taste
14ounceslite coconut milkcan sub full-fat coconut milk
6ouncestomato paste
2tablespoonsdark brown sugarlight works too

Instructions
Add the olive oil to a large skillet over medium heat. Saute the onions until they begin to soften, about 5 minutes. Add garlic and saute for another minute. Stir in the ginger, curry powder, cumin, crushed red peppers, and salt.
Reduce heat to low and stir in the coconut milk, tomato paste, and brown sugar until tomato paste is evenly distributed. Pour it into the Crock Pot.
Stir in the beans and toss gently until the beans are coated.
Cook on low 8 - 10 hours until thick, rich, and bubbling.
