These tender, fluffy, lightly seasoned potatoes are super easy to prep and cook.

Ingredients
2poundsbaby red or baby Yukon gold potatoeswashed and cut in half
2tablespoonsextra virgin olive oil
1teaspoongarlic powder
1/2teaspoonpaprika
1teaspoonkosher salt
1/4teaspoonfreshly ground black pepper
2tablespoonsfresh parsleyminced; optional
Instructions
In a large bowl, toss the potatoes with the olive oil, garlic powder, paprika, salt, and pepper.
Lay out four large pieces of foil.
Divide the potato mix between the pieces of foil. Fold the foil together and seal well. I fold the foil into thirds around the potatoes then fold up the sides.
Preheat the grill on medium-high, to about 400°F. Cook until tender, flipping over approx. every 5 minutes, for about 20 minutes.
Carefully open one of the foil packs and use a fork one to determine if the potato is cooked all of the way through - it should easily pierce the potato all of the way through. If the potato is done, remove packs from the grill. If they're not quite there, fold it back up and cook for another 5 minutes and check again; they should be good to go.
Remove from grill, open packet, sprinkle with parsley if using, and serve.
