It doesn’t get any more hearty and comforting than stew! But if you’re eating vegan or vegetarian, stew recipes can be tricky to find – they are, after all, typically defined as a combination of meat and veggies simmered until thick and rich.
So today, I thought I would gather 15 different vegetarian stews for your perusing (and eating) pleasure! We’ve got a little of everything here, from veggie versions of your traditional beef-and-potatoes stews to wonderfully creamy curries to garlicky bean stews that definitely satisfy. I even included a chili recipe (and a link to a bunch more!) because in my book, meatless chili definitely counts as a vegetarian stews recipe!
