Hello hello! We’re six days into the new year, which means there are only 360 dinners left to make this year! You know … only.
Sorry. Forgive me for bringing it up.
Anyway, I thought I’d round up 10 of my favorite cozy, easy, winter-y, hearty, everything-y dinners that I love to make this time of year. January can be a tough month with coming down from Christmas and the dark, dreary days. But I’ve found when I embrace the coziness of this time, the days are so much nicer. Fuzzy slippers, a good book (or movie), fireplace, puppy or cat on my lap, and cozy dinners. I have actually really, really grown to love winter.
But I digress. Shall we talk dinner? Here are 10 of my favorite winter dinner ideas for January. I hope you find one or two to inspire your January dinners too!
CREAMY SWEET POTATO ROSEMARY SOUP
This simple soup recipe is full of winter flavors and is about as cozy as it gets. Cream cheese melts into the mix and adds tangy flavor (there are a couple of vegan options too). Add some crusty bread and a green salad and January doesn’t seem quite as gloomy.

VEGGIE POT PIE PASTA
This easy, creamy pasta recipe is hearty and comforting without having to deal with the fuss of pie crust. Use vegan butter to bring this vegetarian recipe all the way to vegan land; for the carnivores, simply add some cooked chicken to their portions.

Pita breads make such easy individual pie crusts! Brussels sprouts – such a lovely wintertime veggie – are so good sliced and smothered in cheese (or vegan cheese). For the meat-eaters, a little crumbled bacon never hurts.
