Happy Friday! Here’s an oldie but goodie from my previous blog. These chewy, melt-in-your-mouth morsels tend to be my go-to brownie recipe: not only are they pretty much the perfect brownie, they’re also so wonderfully easy to whip up.

Was it only a mere six weeks ago that I pinned this absolutely brilliant idea for “pulled” spaghetti squash from the wonderful vegan blog The Blooming Platter? Surely it’s been longer, as I’ve enjoyed barbecue pulled spaghetti squash sandwiches several (several) times since then. An embarrassing amount of times, actually.
Yeah, I’ve decided it’s pretty much the most genius food idea ever. Not only is it genius because it works so well, but taking cooked spaghetti squash, tossing it in some good barbecue sauce, and serving it on a toasted bun is seriously, seriously delicious. Delicious and easy. Delicious and easy and brilliant.
I know I’ve already said it’s all those things, but if I don’t continue heaping praise, my burning jealousy for not coming up with the idea myself will shine through.
My poor family. Nearly every morning for the past month, I’ve been plaguing them with some form or another of pumpkin oatmeal. I don’t know why, but I guess I’ve had a little bee in my bonnet. I will perfect some pumpkin oatmeal recipes!
I have lofty goals in life.
My guy has yet to mutter “pumpkin oatmeal, again?” and for that, I am grateful. He also knows that such a comment might land a spoonful on his head, but I digress.
I’ve been a little into grilled cheese lately.
Oh, who am I kidding. Lately? Like I’ve ever not been into grilled cheese. Except that I actually usually called them toasted cheese sandwiches, but that’s a conversation for another day.
Because today, I’ve got a round-up of the cheesiest, butteriest, meltiest, and most creative grilled cheese sandwiches I’ve seen lately. Let’s dive in, shall we?

So, pumpkin. I’ve been a little obsessed with it lately. I mean, it’s my job: I’m a nesting new mom, I’m thoroughly in love with fall, I’m a food blogger, I like to eat. And Nutella too, for that matter. Good gracious, how is it that something can taste that good? Dangerously delicious stuff, that Nutella.
