Ah, weeknight dinner. Such a pain. I mean, I usually adore cooking. But weeknight dinner is still the bane of my existence.
So when I can spend less than 30 minutes (or even under 10 minutes!) whipping up a simple vegetarian dinner recipe without really having to think about it, well, that’s a win. A big, huge ol’ win.
So I thought I’d do a quick round-up of some of my favorite simple vegetarian dinner recipes. These are fast, easy, take little to no brain-work, and are crowd-pleasingly delicious.

TLTs (Tofu, Lettuce, & Tomato) Sandwiches – Thinly sliced, quick-seared-then-seasoned tofu steals the show here. Who needs bacon? (Actually, in our mixed household, my guy has bacon in his and I keep all the tofu for myself. Not a bad deal for me!)

Vegetarian Sushi Bowl – No rolling here – just dump your goodies in a bowl, drizzle with sauce, and enjoy! I’m a huge fan of the wasabi-sesame dressing.


20-Minute Vegetarian White Bean Chili – With three different kinds of beans, it’s still simplest chili recipe ever – and sooo good.


Hummus Chickpea Veggie Burgers – These super-easy veggie burgers use flavorful hummus as a binder. The best part? No food processor required!

12-Minute Scrambled Tofu Fried Rice – Just about the fastest dinner around! Love the hearty hit of scrambled tofu in this one.


Cauliflower Rice Black Bean Burrito Bowls – This one is not only easy, with all those veggies it’s a feel-good dinner too. Love this one!

Grilled Peach & Halloumi Salad – I don’t get to eat cheese much these days, but I seem to do okay with a bit of halloumi now and then, as it’s usually made from goat and/or sheep milk. So this is pretty much my favorite easy dinner come summertime.
