Ah, weeknight dinner. Such a pain. I mean, I usually adore cooking. But weeknight dinner is still the bane of my existence.
So when I can spend less than 30 minutes whipping up a simple vegetarian dinner recipe without really having to think about it, well, that’s a win. A big, huge ol’ win.
